Potato Salad

This classic potato salad is creamy, tangy, and loaded with tender Yukon Gold potatoes, hard-boiled eggs, crunchy celery, red onion, and dill pickles in a mustard mayo dressing. Tossing the warm potatoes with vinegar is the old-fashioned secret to big flavor.

Instructions

  1. Boil the potatoes:

    Place 3 pounds cubed potatoes in a large pot, cover with cold water by 1 inch, and add 1 tablespoon kosher salt. Bring to a boil and cook for 8 to 10 minutes, until just fork-tender. Drain, spread on a sheet pan, and immediately sprinkle with 2 tablespoons apple cider vinegar. Let cool for 20 minutes.

  2. Hard-boil the eggs:

    Meanwhile, place 4 eggs in a saucepan, cover with cold water, and bring to a boil. Turn off the heat, cover, and let sit for 10 minutes, then move to ice water. Peel and chop.

  3. Make the dressing:

    In a large bowl, whisk 1 cup mayonnaise, 2 tablespoons yellow mustard, 1 tablespoon pickle juice, 1 teaspoon kosher salt, and ½ teaspoon black pepper.

  4. Combine:

    Add the cooled potatoes, chopped eggs, 3 diced celery ribs, ⅓ cup red onion, ⅓ cup chopped pickles, and 2 tablespoons dill. Fold gently until coated.

  5. Chill and serve:

    Cover and refrigerate the potato salad for at least 1 hour. Sprinkle with ½ teaspoon paprika just before serving.

Tips

Start the potatoes in cold, well-salted water so they cook evenly and are seasoned all the way through. Yukon Golds hold their shape and stay creamy; red potatoes work too and can be left unpeeled. Sprinkling vinegar on the warm potatoes lets them absorb the tang.

Storage

Store potato salad covered in the refrigerator for up to 4 days. Don't leave it at room temperature for more than 2 hours, or 1 hour above 90°F outdoors.
