Pea Salad

This classic Southern pea salad is creamy, crunchy, and full of flavor, made with sweet green peas, crispy bacon, cubes of sharp cheddar, and red onion in a tangy mayo and sour cream dressing. Instructions

  1. Cook the bacon:

    Cook 6 slices bacon in a skillet over medium heat for 7 to 8 minutes, until crisp. Drain on paper towels and crumble.

  2. Make the dressing:

    In a large bowl, whisk ½ cup mayonnaise, ¼ cup sour cream, 1 tablespoon apple cider vinegar, 1 teaspoon sugar, ¼ teaspoon kosher salt, and ¼ teaspoon black pepper.

  3. Toss:

    Add the thawed peas, 4 ounces cubed cheddar, ⅓ cup red onion, and most of the crumbled bacon and fold gently until coated.

  4. Chill and serve:

    Cover and refrigerate the pea salad for at least 1 hour. Sprinkle with the remaining bacon just before serving.

Tips

There's no need to cook frozen peas; thawing them keeps them sweet, bright green, and crisp. Pat the peas dry so the dressing stays thick and creamy. Add 2 chopped hard-boiled eggs or ¼ cup diced water chestnuts for extra texture.

Storage

Store pea salad covered in the refrigerator for up to 3 days. Add the reserved bacon just before serving to keep it crisp.
