Instructions

Arrange 2 pounds sliced and halved tomatoes on a large platter or in a shallow bowl and sprinkle evenly with 1 teaspoon kosher salt. Scatter ½ thinly sliced red onion over the top.
- Make the vinaigrette:
Whisk ¼ cup olive oil, 2 tablespoons red wine vinegar, 1 grated garlic clove, ½ teaspoon dried oregano, and ¼ teaspoon black pepper.
- Dress and rest:
Drizzle the vinaigrette over the tomatoes and let the tomato salad sit for 15 minutes at room temperature so the juices mingle with the dressing.
