Crab Salad

This easy crab salad, also called seafood salad, is creamy, lemony, and refreshing, made with tender imitation crab, crunchy celery, red onion, and fresh chives in a light mayo and sour cream dressing seasoned with Old Bay-style seafood seasoning. It's a budget-friendly, deli-style favorite ready in 15 minutes. This crab salad recipe is great on rolls, crackers, or lettuce.

Instructions

  1. Chop the crab:

    Chop or shred 1 pound imitation crab into bite-size pieces and place in a large bowl.

  2. Make the dressing:

    In a small bowl, whisk ½ cup mayonnaise, 2 tablespoons sour cream, 1 tablespoon lemon juice, 1 teaspoon seafood seasoning, and ¼ teaspoon black pepper.

  3. Combine:

    Add the dressing, 2 diced celery ribs, 2 tablespoons red onion, and 2 tablespoons chives to the crab and fold gently until coated.

  4. Chill and serve:

    Cover and refrigerate the crab salad for at least 30 minutes. Serve on toasted rolls, croissants, crackers, or lettuce cups.

Tips

Imitation crab is made from white fish (surimi), so it's budget-friendly and already cooked. For a luxurious version, use 1 pound lump crab meat and fold it in very gently to keep the chunks intact. Add 8 ounces cooked small shrimp to make a classic deli seafood salad.

Storage

Store crab salad in an airtight container in the refrigerator for up to 3 days. Don't freeze it.
