Chicken Caesar Salad

Instructions

  1. Marinate the chicken:

    In a bowl, combine 2 tablespoons olive oil, 1 tablespoon lemon juice, 2 minced garlic cloves, 1 teaspoon Italian seasoning, ¾ teaspoon kosher salt, and ½ teaspoon black pepper. Add 1½ pounds pounded chicken breasts and turn to coat while the grill heats.

  2. Grill:

    Preheat a grill or grill pan to medium-high. Grill the chicken for 5 to 6 minutes per side, until it reaches 165°F. Rest for 5 minutes, then slice.

  3. Make the dressing:

    Whisk ½ cup Greek yogurt, ⅓ cup Parmesan, 2 tablespoons lemon juice, 1 tablespoon olive oil, 2 teaspoons anchovy paste, 1 teaspoon Dijon, 1 teaspoon Worcestershire, 1 grated garlic clove, and ¼ teaspoon black pepper. Thin with 1 to 2 tablespoons water until pourable.

  4. Toss and serve:

    Toss the chopped romaine with most of the dressing. Divide among 4 plates and top with the sliced chicken, 1½ cups croutons, and ¼ cup shaved Parmesan. Drizzle the chicken Caesar salad with the remaining dressing.

Tips

Pounding the chicken to an even thickness helps it cook quickly without drying out. For a shortcut, use 3 cups sliced rotisserie chicken. If you prefer the classic rich dressing and homemade garlic croutons, use the dressing from our Caesar Salad recipe.

Storage

For meal prep, store the chicken, romaine, croutons, and dressing separately in the refrigerator for up to 4 days, and toss just before eating.
