Instructions
- Prep:
Preheat the oven to 400°F and line 2 baking sheets with parchment paper. Slice 1 large sweet onion into ¼-inch-thick rounds and separate them into rings; you should have about 24 rings. Save the tiny center rings for another use.
- Cheese base:
Place 1 tablespoon shredded Parmesan in a small mound for each ring, spacing the mounds 2 inches apart, and gently flatten each one into a circle slightly larger than an onion ring.
- Add the onions:
Press an onion ring onto each Parmesan circle. Brush the onions lightly with 1 tablespoon olive oil and sprinkle with ½ teaspoon garlic powder, ½ teaspoon smoked paprika, ¼ teaspoon black pepper, and ⅛ teaspoon kosher salt.
- Bake:
Bake the onion ring chips for 16 to 20 minutes, rotating the pans halfway, until the cheese is deep golden and crisp at the edges.
- Cool and serve:
Let the chips cool on the baking sheets for 3 to 5 minutes; they crisp up as they cool. Transfer to a plate and serve.
Tips
Use shredded Parmesan, not powdery grated cheese, so the base forms a lacy, crunchy crisp. Pull the onion ring chips when they're deep golden; pale chips will be chewy instead of crunchy. Sweet onions like Vidalia caramelize without being too sharp.
Storage
Onion ring chips are crispiest the day they're made. Store leftovers in an airtight container at room temperature for up to 1 day or in the refrigerator for up to 3 days, and re-crisp at 350°F for 3 to 4 minutes.
Serving suggestions
Serve onion ring chips with ranch, marinara, or spicy mayo for dipping, or next to burgers and burger bowls as a low-carb swap for fries.
