Instructions

  1. Blend:

Preheat the oven to 350°F and line a rimmed baking sheet with parchment paper. In a blender, blend 1 cup cottage cheese, 2 large eggs, 1 teaspoon Italian seasoning, ¼ teaspoon garlic powder, and ¼ teaspoon black pepper for 30 to 45 seconds, until completely smooth.

  2. Spread:

Pour the batter onto the parchment and use a spatula to spread it into an even rectangle about 12 x 9 inches and ⅛ inch thick.

  3. Bake:

Bake the cottage cheese flatbread for 35 to 40 minutes, until it's golden all over, dry to the touch, and no longer shiny in the center.

  4. Cool and use:

Let the flatbread cool on the pan for 5 minutes, then peel it off the parchment. Cut it in half to make 2 wraps and fill with your favorite sandwich fillings.

Tips

Blend the batter until totally smooth; any curds left behind make holes in the flatbread. Spread it evenly thin and bake until fully golden, or the center stays soft and tears when you roll it. Add 2 tablespoons grated Parmesan to the batter for a firmer, cheesier flatbread.

Storage

Store cooled cottage cheese flatbread wrapped in plastic wrap or in an airtight container in the refrigerator for up to 4 days. Warm briefly in a dry skillet for 30 seconds per side before filling. You can freeze it between sheets of parchment for up to 2 months.

Serving suggestions

Fill cottage cheese flatbread with turkey, lettuce, tomato, and avocado, roll it up with scrambled eggs for breakfast, or top it with marinara and mozzarella and bake for a quick high-protein pizza.
