Instructions

  1. Brown the beef:

    In a large Dutch oven over medium-high heat, cook 1½ pounds ground beef and 1 diced onion for 8 minutes, breaking up the meat, until browned. Drain the excess fat and stir in 3 minced garlic cloves for 30 seconds.

  2. Season:

    Stir in 1 tablespoon chili powder, 2 teaspoons cumin, 1 teaspoon smoked paprika, 1 teaspoon oregano, 1 teaspoon kosher salt, and ½ teaspoon black pepper and cook for 1 minute.

  3. Simmer:

    Add 1 can black beans, 1 can pinto beans, 1½ cups frozen corn, 1 can diced tomatoes with green chiles, 1 can tomato sauce, and 3 cups beef broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.

  4. Serve:

    Taste and adjust the seasoning. Ladle the taco soup into 8 bowls and top each with 2 tablespoons cheddar, 1 tablespoon sour cream, a handful of crushed tortilla chips, and a sprinkle of cilantro.

Tips

To make taco soup in a crockpot, brown the beef and onion, then add everything to a 6-quart slow cooker and cook on LOW for 6 hours or HIGH for 3 hours. Swap the beef for ground turkey for a lighter version. Add 1 cup cooked rice or a can of drained kidney beans to stretch it even further.

Storage

Store taco soup without toppings in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat over medium heat until hot.
