Instructions
- Brown the chicken:
Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat. Season 1 pound chicken pieces with 1 teaspoon kosher salt, ½ teaspoon black pepper, and 1 teaspoon Italian seasoning. Cook for 5 to 6 minutes, stirring occasionally, until golden. Transfer to a plate.
- Aromatics:
Reduce the heat to medium and melt 1 tablespoon unsalted butter in the pot. Add 1 diced onion and cook for 4 minutes. Add 4 minced garlic cloves, ½ cup chopped sun-dried tomatoes, 2 tablespoons tomato paste, and ½ teaspoon red pepper flakes and cook for 1 minute.
- Simmer:
Pour in 4 cups low-sodium chicken broth, scraping up the browned bits. Return the chicken to the pot, bring to a boil, then reduce the heat and simmer for 10 minutes.
- Gnocchi:
Add 1 pound potato gnocchi and simmer for 3 to 4 minutes, until the gnocchi float and are tender.
- Make it creamy:
Reduce the heat to low. Stir in 1 cup heavy cream and ¾ cup grated Parmesan until melted, then add 3 cups baby spinach and stir for 1 minute, until wilted. Taste and add up to ½ teaspoon more kosher salt if needed.
- Serve:
