  1. Season the chicken:

    Pat 1½ pounds chicken cutlets dry. Season both sides with 1 teaspoon kosher salt, ½ teaspoon black pepper, and 1 teaspoon Italian seasoning, then lightly dust with 2 tablespoons all-purpose flour.

  2. Sear:

    Heat 2 tablespoons olive oil in a 12-inch skillet over medium-high heat. Cook the chicken for 4 to 5 minutes per side, until golden brown and an instant-read thermometer reads 165°F. Transfer to a plate.

  3. Aromatics:

    Reduce the heat to medium and melt 1 tablespoon unsalted butter in the same skillet. Add 4 minced garlic cloves, ½ cup chopped sun-dried tomatoes, ½ teaspoon dried oregano, and ¼ teaspoon red pepper flakes, and cook for 1 minute, until fragrant.
