Dumpling Bake
This viral dumpling bake turns a bag of frozen potstickers into a cozy, one-dish dinner. Dumplings bake in a savory soy-ginger broth with bok choy, mushrooms, and edamame until tender, then turn golden and crisp on top.

Instructions
- Vegetables:
Preheat the oven to 400°F. Spread 8 ounces quartered baby bok choy, 4 ounces sliced shiitake mushrooms, and 1 cup frozen shelled edamame in the bottom of a 9x13-inch baking dish.
- Sauce:
In a medium bowl, whisk together 1½ cups low-sodium chicken broth, 3 tablespoons low-sodium soy sauce, 1 tablespoon rice vinegar, 1 tablespoon toasted sesame oil, 1 tablespoon honey, 3 minced garlic cloves, and 1 tablespoon grated fresh ginger.
- Arrange the dumplings:
Arrange 1½ pounds frozen potstickers in a single layer on top of the vegetables, flat side down. Pour the sauce evenly over the dumplings; the liquid should come about halfway up their sides.
- Bake covered:
Cover the baking dish tightly with aluminum foil and bake the dumpling bake for 20 minutes.
- Crisp:
Remove the foil and bake for another 12 to 15 minutes, until most of the liquid is absorbed, the dumpling tops are golden and crisp at the edges, and the filling reaches 165°F.
- Serve:
Let the dumpling bake rest for 5 minutes. Drizzle with 2 tablespoons chili crisp and sprinkle with 1 tablespoon toasted sesame seeds and 3 sliced scallions. Spoon into bowls with some of the vegetables and broth.
Tips
Don't thaw the dumplings; baking them straight from frozen keeps the wrappers from turning mushy. Potstickers with thicker wrappers hold up better than thin wontons. For extra-crispy tops, broil for 2 minutes at the end. For a vegetarian dumpling bake, use vegetable dumplings and vegetable broth.
Storage
Dumpling bake is best served fresh. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat at 350°F for 10 minutes or in the microwave; the wrappers will soften. Freezing isn't recommended.
Serving suggestions
Serve the dumpling bake on its own or over steamed jasmine rice, with a smashed cucumber salad and extra chili crisp on the side.
