Creamy Chicken Wild Rice Soup

Instructions
- Sauté:
Melt 4 tablespoons butter in a large Dutch oven over medium heat. Add 1 diced onion, 3 diced carrots, 3 diced celery ribs, and 8 ounces sliced mushrooms and cook for 8 minutes, until softened. Add 3 minced garlic cloves, 1 teaspoon thyme, and ½ teaspoon rosemary and cook for 1 minute.
- Roux:
Sprinkle ⅓ cup flour over the vegetables and stir for 1 minute, then slowly whisk in 7 cups chicken broth.
- Simmer the rice and chicken:
Add 1 cup rinsed wild rice blend, 1½ pounds chicken breasts, 1 teaspoon kosher salt, and ½ teaspoon black pepper. Bring to a boil, then cover and simmer for 20 minutes. Remove the chicken and continue simmering the rice for 20 to 25 minutes more, until tender.
- Shred and finish:
Shred the chicken and return it to the pot. Stir in 1 cup heavy cream and heat gently for 3 minutes without boiling. Taste and adjust the salt.
- Serve:
Ladle the chicken wild rice soup into bowls and sprinkle with 2 tablespoons chopped parsley.
Tips
Check the cooking time on your wild rice package; pure wild rice can take up to 50 minutes, while blends usually cook in 40 to 45. For a shortcut, stir in 3 cups shredded rotisserie chicken with the cream. If the soup gets too thick, add 1 cup more broth.
Storage
Store leftover soup in the refrigerator for up to 4 days and reheat over low heat with a splash of broth. Freezing isn't recommended, because the cream can separate.
