Cheeseburger Soup

This creamy cheeseburger soup tastes just like your favorite burger in a bowl: seasoned ground beef, tender potatoes, carrots, and celery in a rich, cheesy broth with a hint of mustard and Worcestershire.

Instructions

  1. Brown the beef:

    In a large Dutch oven over medium-high heat, cook 1 pound ground beef for 7 to 8 minutes, breaking it up, until browned. Drain and transfer to a plate.

  2. Vegetables and roux:

    Melt 3 tablespoons butter in the pot over medium heat. Add 1 diced onion, 2 diced carrots, and 2 diced celery ribs and cook for 6 minutes. Sprinkle in ¼ cup flour and stir for 1 minute.

  3. Simmer:

    Slowly whisk in 4 cups beef broth. Add 1½ pounds cubed potatoes, the browned beef, 1 tablespoon yellow mustard, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon kosher salt, and ½ teaspoon black pepper. Simmer for 15 to 18 minutes, until the potatoes are tender.

  4. Add the cheese:

    Reduce the heat to low and stir in 1½ cups whole milk. Remove from the heat and stir in 8 ounces shredded cheddar, a handful at a time, until melted and smooth.

  5. Serve:

    Ladle the cheeseburger soup into bowls and top with ¼ cup diced pickles and 2 sliced green onions.

Tips

Shred your own cheddar so the soup stays silky; pre-shredded cheese can make it grainy. Add crumbled cooked bacon on top for a bacon cheeseburger soup. Use ground turkey and reduced-fat cheddar for a lighter version.

Storage

Store leftover soup in the refrigerator for up to 4 days and reheat gently over low heat, stirring often. Freezing isn't recommended, because the cheese sauce can separate.
