Zucchini Fritters

Instructions

  1. Salt the zucchini:

    Toss 1½ pounds grated zucchini with 1 teaspoon kosher salt in a colander and let it sit for 10 minutes. Wrap it in a clean kitchen towel and squeeze firmly until no more liquid comes out.

  2. Mix the batter:

    In a large bowl, whisk 2 eggs, then stir in the squeezed zucchini, 3 sliced green onions, 1 minced garlic clove, ½ cup crumbled feta, and 2 tablespoons chopped dill. Sprinkle in ½ cup flour, ½ teaspoon baking powder, and ¼ teaspoon black pepper and stir just until combined.

  3. Pan-fry:

    Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat. Scoop heaping 2-tablespoon mounds of batter into the pan, flatten slightly, and cook for 3 to 4 minutes per side, until deep golden. Repeat with the remaining 2 tablespoons oil and batter to make about 12 fritters.

  4. Sauce and serve:

    Stir ½ cup Greek yogurt with 1 tablespoon lemon juice, 1 grated garlic clove, and a pinch of salt. Serve the warm zucchini fritters with the yogurt sauce.

Tips

Squeezing out the water is the most important step; wet zucchini makes soggy fritters that fall apart. Keep finished fritters warm on a rack in a 200°F oven while you cook the rest. Swap the feta for ½ cup grated Parmesan or shredded cheddar if you prefer.

Storage

Store leftover zucchini fritters in the refrigerator for up to 3 days and reheat at 375°F for 8 minutes or in the air fryer for 4 minutes. They can be frozen in a single layer for up to 2 months.
