Instructions
- Crisp the bacon:
In a large, deep skillet or Dutch oven over medium heat, cook 6 slices chopped bacon for 7 to 8 minutes, until crispy. Transfer to a paper towel-lined plate, leaving the drippings in the pan.
- Onions:
Add 1 sliced onion to the drippings and cook for 5 minutes, until soft, then add 2 minced garlic cloves for 30 seconds.
- Cook the cabbage:
Add the chopped cabbage, 2 tablespoons butter, 1 teaspoon kosher salt, ½ teaspoon black pepper, ½ teaspoon smoked paprika, and ¼ teaspoon red pepper flakes. Cook for 12 to 15 minutes, stirring often, until the cabbage is tender and lightly browned in spots.
- Finish and serve:
Stir in 1 tablespoon apple cider vinegar and the crispy bacon. Taste, adjust the salt, and serve the fried cabbage hot.
Tips
The cabbage will look like a mountain at first but cooks down by more than half, so use your biggest pan. For a heartier meal, add 12 ounces sliced smoked sausage with the onions. Leave out the bacon and use 3 tablespoons olive oil for a vegetarian version.
Storage
Store leftover fried cabbage in the refrigerator for up to 4 days and reheat in a skillet over medium heat.
