Instructions

  1. Preheat:

Preheat the oven to 425°F and line a rimmed baking sheet with parchment.

  2. Season:

Arrange 1½ pounds trimmed asparagus on the sheet. Drizzle with 2 tablespoons olive oil, sprinkle with 2 minced garlic cloves, ½ teaspoon kosher salt, and ¼ teaspoon black pepper, and toss to coat. Spread in a single layer.

  3. Roast:

Roast for 8 minutes, then sprinkle with ¼ cup grated Parmesan and roast for 2 to 4 minutes more, until the asparagus is tender-crisp and the cheese is melted.

  4. Finish and serve:

Sprinkle the roasted asparagus with 1 teaspoon lemon zest and drizzle with 1 tablespoon lemon juice. Serve warm.

Tips

Snap off one spear to find where the tough end starts, then line up the bunch and trim the rest at the same spot. Thin spears may need only 7 to 8 minutes total, while thick spears can take up to 15. Skip the Parmesan to make roasted asparagus vegan and dairy-free.

Storage

Store leftover roasted asparagus in the refrigerator for up to 3 days. Enjoy it cold in salads or reheat briefly at 400°F for 3 minutes.

Serving suggestions

Serve roasted asparagus with salmon, steak, roast chicken, Easter ham, or alongside eggs for brunch.
