Instructions

  1. Season:

    Preheat the oven to 425°F and line a large rimmed baking sheet with parchment. Toss 2 pounds carrots with 2 tablespoons olive oil, ¾ teaspoon kosher salt, and ¼ teaspoon black pepper and spread in a single layer.

  2. Roast:

    Roast for 20 minutes, until the carrots start to brown.

  3. Glaze:

    Whisk 3 tablespoons melted butter, 3 tablespoons honey, 2 minced garlic cloves, 1 teaspoon thyme, and ¼ teaspoon red pepper flakes. Pour over the carrots, toss, and roast for 8 to 10 minutes more, until tender and glossy.

  4. Serve:

    Transfer the roasted carrots to a platter, spoon any glaze from the pan over the top, and sprinkle with 1 tablespoon chopped parsley.

Tips
