Garlic Green Beans
These garlic green beans are bright green, tender-crisp, and sautéed in butter and olive oil with plenty of sliced garlic, a squeeze of lemon, and toasted almonds for crunch. Instructions
- Blanch:
Bring a large pot of water to a boil with 1 tablespoon kosher salt and fill a large bowl with ice water. Boil 1½ pounds trimmed green beans for 3 minutes, until bright green and tender-crisp, then transfer them to the ice water. Drain and pat dry.
- Sauté the garlic:
Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium heat. Add 4 sliced garlic cloves and ¼ teaspoon red pepper flakes and cook for 1 minute, until fragrant and just golden.
- Sauté the beans:
Add the green beans, ½ teaspoon kosher salt, and ¼ teaspoon black pepper and toss for 3 to 4 minutes, until heated through and lightly blistered.
- Finish and serve:
Remove from the heat, toss with 1 tablespoon lemon juice, and sprinkle with 2 tablespoons toasted sliced almonds. Serve the garlic green beans right away.
Tips
The ice bath stops the cooking and locks in the bright green color. Blanch the beans up to 2 days ahead and keep them in the refrigerator, then sauté just before serving. Use 3 tablespoons olive oil instead of butter for vegan, dairy-free green beans.
Storage
Store leftover garlic green beans in the refrigerator for up to 4 days and reheat in a skillet for 2 to 3 minutes.
