Instructions
- Soak:
Place the cut sweet potato fries in a bowl of cold water and soak for 30 minutes to remove excess starch. Drain and pat completely dry with a clean towel.
- Coat:
In a dry bowl, toss the fries with 1 tablespoon cornstarch until lightly coated. Add 1½ tablespoons olive oil, ¾ teaspoon kosher salt, ½ teaspoon smoked paprika, ½ teaspoon garlic powder, and ¼ teaspoon black pepper and toss again.
- Air fry:
Preheat the air fryer to 380°F. Arrange half the fries in a single layer with a little space between them and air fry for 12 to 15 minutes, shaking the basket halfway, until crispy and browned at the edges. Repeat with the remaining fries.
- Serve:
Let the sweet potato fries sit in the basket for 2 minutes to crisp up, then sprinkle with a pinch more salt and serve hot.
Tips
Cutting the fries the same thickness is the key to even cooking. Don't overcrowd the basket; fries need air around them to crisp. No air fryer? Bake on a parchment-lined sheet at 425°F for 25 to 30 minutes, flipping halfway.
Storage
Store leftover sweet potato fries in the refrigerator for up to 3 days and re-crisp in the air fryer at 400°F for 3 to 4 minutes.
